  • 2 tbsp olive oil
  • 150 g frozen peas
  • 0.5 cucumber
  • 30 g fresh spinach
  • 1 avocado
  • 30 g almonds
  • 30 g pickled red onions
  • 2 tbsp tahini
  • Juice from 0.5 lemon

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes, toss them in olive oil, salt, and pepper, and spread them out on half of a lined baking sheet.
  3. Cut the cauliflower into bite-sized florets, season with olive oil, salt, pepper, and paprika, then place on the other half of the baking sheet.
  4. Roast both vegetables for about 25 minutes until golden brown and tender.
  5. While roasting, prepare the fresh ingredients: rinse spinach, slice cucumber into ribbons, thaw peas under warm water, and slice avocado.
  6. Assemble your Buddha bowl starting with spinach as the base; top with roasted sweet potatoes and cauliflower, fresh cucumber, peas, avocado, almonds, and pickled red onions.
  7. Drizzle with tahini dressing made by mixing tahini with lemon juice and water until desired consistency is achieved.
