Ingredients

Scale
  • 400g baby potatoes (skin on)
  • 250g fresh asparagus (woody ends trimmed)
  • 2 salmon fillets (150-170g each)
  • 100g shredded mozzarella or a mix of mozzarella & cheddar
  • 1.5 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 220°C (425°F). Toss baby potatoes with olive oil, salt, and pepper, then spread on a baking tray. Roast for 30 minutes or until golden brown.
  2. Prepare the salmon marinade by combining olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper in a bowl. Coat the salmon fillets evenly.
  3. Steam or blanch asparagus for 2-3 minutes until tender, then drain. In an oven-safe pan, melt butter over medium heat. Add minced garlic and sauté for one minute before adding asparagus. Season with salt and pepper.
  4. Top the asparagus with shredded cheese and place under the broiler for about 4-5 minutes until bubbly and golden.
  5. Grill marinated salmon in a hot pan for about 3-4 minutes per side until cooked through.
  6. Serve together; plate cheesy asparagus next to herb-roasted baby potatoes and grilled salmon.
