Ingredients

Scale
  • 2 cups low-fat milk
  • 2 cups water
  • 1 cup yellow cornmeal grits
  • 1 teaspoon Kosher salt
  • 2 tablespoons salted butter
  • 1 cup shredded white cheddar cheese
  • 1½ pounds shrimp (peeled & deveined)
  • 1½ cups chopped onion
  • 3 cloves garlic (minced)
  • 1½ cups low sodium chicken broth
  • 1 cup heavy cream
  • Spices: cayenne pepper, black pepper, hot sauce

Instructions

  1. In a medium saucepan, combine the low-fat milk, water, and Kosher salt. Bring to a gentle boil. Gradually whisk in the yellow cornmeal grits to avoid clumping. Reduce heat and simmer for about 20 minutes, stirring occasionally until creamy.
  2. Meanwhile, in a large skillet over medium heat, melt the butter and sauté the onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add shrimp to the skillet; season with salt and pepper. Cook until they turn pink (about 3-4 minutes).
  4. Stir in chicken broth and heavy cream; bring to a simmer. Add cornstarch mixed with water to thicken the sauce.
  5. Once the grits are ready, stir in cheese until melted. Serve grits topped with shrimp mixture.
