Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound chicken apple sausage (sliced)
  • 1/2 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1 Granny Smith apple (chopped)
  • 2 cups chicken broth
  • 1 can (14.5 oz) tomatoes with green chilies
  • 1/2 cup heavy cream
  • 10 ounces pasta (Cellentani or preferred short pasta)
  • 1 cup Monterey Jack cheese (shredded)
  • Salt and pepper to taste
  • 1/4 cup green onions (sliced for garnish)

Instructions

  1. Heat olive oil in a large oven-safe pan over medium-high heat. Add chopped onions and sliced sausage; sauté until golden brown, about five minutes.
  2. Stir in minced garlic and chopped apples; cook for an additional minute until fragrant.
  3. Add chicken broth, canned tomatoes, heavy cream, and pasta to the pan. Season with salt and pepper; bring to a boil.
  4. Reduce heat, cover, and simmer until pasta is al dente, approximately 10 minutes, stirring occasionally.
  5. Remove from heat and mix in half of the Monterey Jack cheese. Sprinkle remaining cheese on top.
  6. Broil on high for about 3 minutes until cheese is bubbly and golden brown.
  7. Top with sliced green onions before serving.
