The addition of a spicy roasted jalapeño-feta pesto elevates this dish, adding layers of texture and excitement. Sweet charred corn lends an extra burst of flavor, making this meal not just dinner but a delightful experience to share with loved ones.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp coconut oil
  • 4 cloves garlic
  • 2 tbsp full-fat canned coconut milk
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • Salt & black pepper to taste
  • 2 medium Yukon Gold potatoes
  • 4 oz crumbled feta cheese
  • 2–3 jalapeños
  • 1 cup corn kernels

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved jalapeños and unpeeled garlic with olive oil on a baking sheet. Roast for 15–20 minutes until softened.
  2. Cube Yukon Gold potatoes, coat with olive oil, salt, and pepper, and roast alongside corn for about 25 minutes until crisp.
  3. Marinate chicken in coconut oil, garlic, coconut milk, oregano, cumin, salt, and pepper for at least 15 minutes.
  4. Sauté marinated chicken in a skillet over medium-high heat for about 5–7 minutes until cooked through.
  5. Prepare Alfredo sauce by melting butter in the same skillet, sautéing minced garlic, then adding coconut milk and heavy cream. Stir in Parmesan cheese until melted.
  6. Blend roasted jalapeños, garlic, feta cheese, cilantro (or basil), lime juice, and olive oil into a pesto.
  7. Combine Alfredo sauce with pesto before serving over crispy potatoes topped with charred corn.
