Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried parsley
- 4 garlic cloves, minced (3 for chicken and sauce, 1 for potatoes)
- Salt & pepper to taste
- For the creamy herb sauce: 1 tbsp butter, 1 tbsp all-purpose flour, 200 ml chicken broth, 100 ml heavy cream, mixed dried herbs
- For the mashed potatoes: 800 g potatoes, 2 tbsp butter, 100 ml milk
- For roasted carrots: 400 g carrots
Instructions
- Prepare the mashed potatoes by peeling and chopping the potatoes into even pieces. Boil in salted water for about 15–18 minutes until tender. Drain and mash with butter and milk.
- Preheat your oven to 200°C (390°F) for the carrots. Toss halved carrots with olive oil, thyme, salt, and pepper; spread on a baking sheet and roast for 25–30 minutes until golden.
- Season chicken thighs with salt, pepper, thyme, parsley, and minced garlic. Heat olive oil in a skillet over medium-high heat and sear thighs skin-side down until golden brown (5–6 minutes each side). Remove from skillet once cooked through.
- In the same skillet, melt butter over medium heat; sauté remaining minced garlic for about 30 seconds. Add flour to create a roux before whisking in chicken broth and heavy cream until thickened. Stir in mixed herbs; season to taste.
- Serve chicken over mashed potatoes with roasted carrots on the side; drizzle generously with creamy herb sauce.
