Ingredients

Scale
  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 pound shrimp (deveined)
  • 3 garlic cloves (minced)
  • 4 oz sun-dried tomatoes (chopped)
  • 1 cup half-and-half
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Reserve half a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat and sauté the shrimp until they turn pink (about 3–5 minutes). Remove from skillet.
  3. In the same skillet, add minced garlic and sun-dried tomatoes; sauté until fragrant (about 1 minute).
  4. Pour in half-and-half and let it simmer for about 5–7 minutes until slightly thickened.
  5. Stir in mozzarella cheese, basil, red pepper flakes, and salt; mix until smooth.
  6. Combine cooked penne with the sauce and add reserved pasta water as needed for desired consistency.
  7. Serve hot and enjoy!
