Ingredients
- 1 lb beef steak (sirloin or flank), cut into bite-sized pieces
- Salt and pepper to taste
- 3 tbsp butter
- 3 cloves garlic, minced
- 10 oz penne or rotini pasta
- 4 oz cream cheese, softened
- ¾ cup milk (or cream)
- 1–2 tsp chipotle in adobo (finely minced or blended)
- ½ cup grated Parmesan cheese
- Optional: chopped cilantro or parsley for garnish
Instructions
- Cook the pasta: Boil salted water in a large pot and add pasta. Cook until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
- Sear the steak: Season beef with salt and pepper. Heat 1 tbsp butter in a skillet over high heat. Add steak bites and sear until browned on all sides (about 5-6 minutes total). Remove from skillet.
- Make the sauce: In the same skillet, lower heat to medium-low. Add remaining butter and garlic; sauté until fragrant (about 1 minute). Stir in chipotle, cream cheese, and milk until smooth.
- Combine: Add drained pasta to the sauce along with reserved pasta water as needed for consistency. Return steak to skillet and toss everything together until well-coated.
- Serve: Garnish with Parmesan cheese and fresh herbs if desired.
