Ingredients

Scale
  • 6 cube steaks
  • 2 cups all-purpose flour
  • 3 tbsp seasoning salt
  • Pinch dried thyme leaves
  • Pinch dried oregano
  • 1/2 tsp smoked paprika
  • 3 tsp baking powder
  • 1 1/4 cup milk
  • 4 large eggs
  • 2 tbsp Worcestershire sauce (non-alcoholic)
  • Dash hot sauce
  • Canola oil (for frying)
  • 6 tbsp salted butter
  • 1/3 cup flour (for gravy)
  • 2 3/4 cup milk (for gravy)
  • 1 1/2–2 tsp freshly ground black pepper

Instructions

  1. Prepare Your Breading Station: Set up three shallow dishes: one for seasoned flour (combine flour, seasoning salt, thyme, oregano, paprika), one for whisked eggs mixed with milk, and reserve some plain flour for later use.
  2. Season the Cube Steaks: Generously season both sides of cube steaks with salt and press into the seasoned flour until evenly coated.
  3. Heat the Oil: In a cast iron skillet, pour canola oil to a depth of about one inch. Heat over medium-high until shimmering (approximately 350°F).
  4. Fry the Steaks: Carefully add breaded cube steaks to the hot oil and fry for about 3 minutes per side or until golden brown. Transfer to paper towels to drain excess oil.
  5. Make the Gravy: In the same skillet, melt butter over medium heat. Whisk in additional flour to create a roux, cooking until golden. Slowly add milk while whisking continuously until thickened. Season with black pepper.
  6. Serve: Place fried steaks on serving plates and generously ladle gravy over each steak before enjoying this comforting dish.
