Ingredients
- ¾ cup unsalted butter
- 1 cup all-purpose flour
- 2 ribs celery, roughly chopped
- 1 large yellow onion, roughly chopped
- 1 large green bell pepper, roughly chopped
- 2 teaspoons garlic, minced
- 10 cups beef broth
- 1 ring kielbasa, sliced into rounds
- 1 can stewed tomatoes
- 1 can tomato sauce
- 2 tablespoons hot sauce
- 1 tablespoon white sugar
- ½ teaspoon Cajun seasoning
- ½ teaspoon dried thyme leaves
- 4 teaspoons gumbo filé powder, divided
- 4 bay leaves
- 3 pounds medium shrimp, peeled and deveined
- 2 tablespoons Worcestershire sauce (optional)
- Cooked white rice for serving
Instructions
- In a large pot over medium-low heat, melt the unsalted butter until bubbling gently. Gradually whisk in the all-purpose flour until smooth, stirring constantly for 30–40 minutes until dark brown.
- Remove the pot from heat, and add chopped celery, onion, green bell pepper, and minced garlic. Stir well and let soften for 8–12 minutes.
- Pour in the beef broth while whisking continuously to avoid lumps. Add sliced kielbasa, stewed tomatoes, tomato sauce, hot sauce, sugar, Cajun seasoning, thyme leaves, and bay leaves.
- Bring to a gentle simmer uncovered for about 45 minutes to allow flavors to meld.
- Gently fold in shrimp and Worcestershire sauce if using. Simmer for another 45–60 minutes until shrimp are cooked through.
- Stir in gumbo filé powder before serving over fluffy white rice.
