Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 250ml chicken broth
  • 100ml heavy cream
  • 800g Yukon Gold or Russet potatoes, peeled and chopped
  • 300g baby carrots
  • 1 tbsp honey

Instructions

  1. Preheat oven to 200°C (392°F).
  2. Season chicken thighs with salt, pepper, garlic, thyme, and rosemary.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for about 5–6 minutes until golden brown; flip and sear for another 5 minutes.
  4. Transfer the skillet to the oven and roast chicken for 15–20 minutes until cooked through.
  5. Boil potatoes in salted water for about 15–18 minutes until fork-tender. Drain and mash with butter and warm milk until creamy; season with salt.
  6. In another pan, melt butter for the carrots over medium heat. Add baby carrots and cook for about 8–10 minutes until tender; drizzle with honey.
  7. For gravy: In the skillet used for chicken, melt remaining butter over medium heat; add broth and cream, scraping up bits from the bottom. Simmer for about 5 minutes until thickened.
  8. Serve mashed potatoes topped with chicken thighs and glazed carrots on the side.
