Ingredients

Scale
  • 1 pound large shrimp (peeled & deveined)
  • 8 ounces high-protein noodles (whole wheat, edamame, or chickpea noodles)
  • 1 red bell pepper (sliced)
  • 1 cup broccoli florets
  • 1 carrot (julienned)
  • 1 cup snow peas
  • 3 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • Optional: sriracha or red pepper flakes for spice

Instructions

  1. Prepare the shrimp by peeling and deveining if not done already. Slice the red bell pepper and julienne the carrot. Wash and trim broccoli florets and snow peas.
  2. Cook the high-protein noodles according to package instructions until al dente. Drain and set aside.
  3. Heat sesame oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, sautéing briefly until fragrant.
  4. Add the shrimp in a single layer; cook for about 2-3 minutes per side until they turn pink and opaque. Remove from heat and set aside.
  5. In the same pan, add sliced bell pepper, broccoli florets, julienned carrot, and snow peas; stir-fry for about 4-5 minutes until tender yet crisp.
  6. Return shrimp to the pan; add soy sauce, honey or maple syrup, and optional spice. Stir to combine everything well.
  7. Gently fold in the cooked noodles, tossing until evenly coated in sauce. Heat through for another 2-3 minutes before serving.
