Ingredients
- 400g ground beef (or mix of beef & turkey)
- 1 egg
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp paprika
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup basmati rice
- 2 cups water
- 1 zucchini, sliced into rounds
- 1 red bell pepper, chopped
- 1 cup butternut squash, diced
- Olive oil for frying and roasting
Instructions
- Cook the rice by rinsing it under cold water until clear. In a medium pot, combine rinsed rice and water with a pinch of salt. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until water is absorbed. Fluff with a fork.
- In a large bowl, combine ground beef, egg, breadcrumbs, onion, garlic, parsley, paprika, oregano, salt, and pepper. Mix until just combined; do not overwork.
- Form the mixture into golf ball-sized meatballs.
- Heat olive oil in a skillet over medium-high heat. Add meatballs in batches without overcrowding; brown on all sides until cooked through (about 10 minutes total).
- Preheat the oven to 400°F (200°C). Toss zucchini, bell pepper, and butternut squash in olive oil with thyme; season with salt and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and slightly charred.
- Serve meatballs over rice alongside roasted veggies.
