Ingredients

Scale
  • 1 lb smoked sausage (or turkey/chicken for a lighter option), sliced
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1 cup honey BBQ sauce
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • Olive oil
  • Paprika and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper; sauté for 3–4 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add sliced smoked sausage to the skillet, cooking until browned (about 5 minutes).
  4. Sprinkle paprika and black pepper over the sausage mixture.
  5. Pour in rinsed rice, chicken broth, and honey BBQ sauce. Stir gently to combine.
  6. Bring to a boil over medium-high heat, then reduce heat to low and cover. Simmer for 20 minutes without lifting the lid.
  7. In the last five minutes of cooking, gently fold in frozen corn.
  8. After cooking time is complete, let rest covered for an additional five minutes before fluffing with a fork.
  9. Garnish with fresh parsley before serving.
