Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 500g baby potatoes, halved
  • 200g green beans, trimmed
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • 3 tbsp olive oil
  • Optional: Juice of 1/2 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
  2. In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, half the minced garlic, salt, pepper, thyme, and rosemary until evenly coated.
  3. Drizzle 1 tablespoon of olive oil over the chicken breasts and season with remaining garlic, parsley, salt, and pepper. Rub evenly on both sides.
  4. Spread the seasoned potatoes in the prepared baking dish and place the chicken breasts on top.
  5. Bake uncovered for about 25 minutes.
  6. After 25 minutes, sprinkle the trimmed green beans over the dish and return to the oven for an additional 12-15 minutes until everything is golden brown and cooked through.
  7. Let the chicken rest for about 5 minutes before slicing. Serve warm with a squeeze of lemon juice if desired.
