Ingredients

Scale
  • 1 pound ground beef
  • 6 tablespoons butter
  • 1 cup diced yellow onion
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 ounces uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 ounces shredded sharp cheddar cheese
  • 1 teaspoon white balsamic vinegar
  • Kosher salt and fresh cracked pepper (to taste)

Instructions

  1. Preheat oven to 400°F for croutons. Dice sesame seed buns into cubes, drizzle with olive oil, toss to coat, and bake for about 10 minutes until crispy.
  2. In a large pot over medium heat, brown the ground beef with oregano and thyme; season with salt and pepper. Set aside.
  3. In the same pot, melt butter and sauté onions, carrots, and celery for about 10 minutes until tender. Add garlic and cook for an additional minute.
  4. Stir in flour and cook for another minute to eliminate raw taste.
  5. Deglaze the pot with chicken broth; stir to lift browned bits from the bottom. Add remaining broth and bring to a simmer.
  6. Add elbow macaroni; cook for about 5-7 minutes until al dente.
  7. Remove from heat; stir in heavy cream, cheddar cheese, and vinegar until well combined.
  8. Serve hot topped with croutons, green onions, and extra cheddar cheese.
