  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan cheese
  • ⅓ cup breadcrumbs
  • 2 lb red potatoes, cut into bite-sized pieces
  • 1 lb fresh green beans, trimmed
  • Sea salt and cracked pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
  2. In a bowl, toss red potatoes with 2 Tbsp olive oil, minced garlic, salt, and pepper. Spread on one side of the sheet pan.
  3. Roast potatoes in the oven for about 15 minutes until starting to brown.
  4. Meanwhile, mix chicken breast with olive oil, minced garlic, parmesan cheese, breadcrumbs, salt, and pepper until well-coated.
  5. Remove the sheet pan from the oven and move potatoes aside. Place coated chicken on the other side of the pan.
  6. Toss green beans with olive oil, minced garlic, salt, and pepper. Add them to the pan alongside chicken and potatoes.
  7. Return to oven and roast for an additional 25 minutes or until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender-crisp.
