Ingredients

Scale
  • 1 tbsp unsalted butter (or olive oil)
  • 1 brown onion, finely chopped
  • 2 garlic cloves, minced
  • 3 carrots, peeled and diced
  • 2 scallions, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried marjoram
  • ¼ tsp ground turmeric
  • ¼ tsp ground nutmeg
  • 1 bay leaf
  • 3 waxy potatoes, diced (about 10 oz)
  • ½ cup frozen green peas
  • 4 cups chicken broth (low-sodium preferred)
  • 4 tbsp full-fat sour cream (room temperature)
  • 4 tbsp fresh dill, chopped (divided)

Instructions

  1. In a large pot over medium-low heat, melt the butter. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute.
  2. Add diced carrots and scallions to the pot; cook for about two minutes until they soften slightly.
  3. Stir in salt, black pepper, marjoram, turmeric, nutmeg, and bay leaf; cook for one more minute.
  4. Add potatoes and peas to the pot. Pour in chicken broth to cover all ingredients. Bring to a boil then reduce heat to simmer for about 15 minutes until potatoes are tender.
  5. Remove from heat; stir in the sour cream gradually until well combined. Finally, add three tablespoons of fresh dill just before serving.
