Ingredients

Scale
  • 8–12 medium roasting potatoes
  • 200 g crumbled feta cheese
  • 3 tbsp small capers or sliced black olives
  • 2 large cloves garlic (sliced)
  • 1 red onion (thinly sliced)
  • Small sprig of rosemary (torn)
  • 1 lemon (cut into quarters)
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F). Drizzle olive oil onto a large skillet or roasting tray.
  2. Rinse the medium roasting potatoes under cool water, pierce them several times with a knife, then microwave covered with damp paper towels for about 7-12 minutes until tender.
  3. Carefully smash each potato on the prepared skillet using a potato masher until the flesh breaks through but retains shape.
  4. Drizzle olive oil over the smashed potatoes and season generously with salt and pepper. Scatter sliced garlic, torn rosemary, and nestle quartered lemons among the potatoes.
  5. Roast in preheated oven for about 10 minutes until golden brown.
  6. Remove from oven, sprinkle crumbled feta cheese, red onion slices, and capers or olives over the top; return to oven for an additional 5 minutes.
  7. Squeeze roasted lemon juice over everything before serving.
