Ingredients

Scale
  • 1 pound ground beef (or turkey/chicken)
  • 4 cups chopped potatoes (Russet or Yukon Gold)
  • 1 can (15 ounces) kidney beans (drained and rinsed)
  • 1 can (15 ounces) corn (drained)
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional, for topping)

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain excess fat.
  2. In the slow cooker, layer half of the chopped potatoes followed by half of the kidney beans and corn.
  3. Pour half of the tomato sauce over this layer.
  4. Add the browned ground beef on top, seasoning with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Layer the remaining potatoes and beans on top before drizzling with the rest of the tomato sauce.
  6. Cover the slow cooker and cook on low for about 6 hours or high for 3–4 hours.
  7. If using cheese, add it during the last 20 minutes of cooking for melting.
