Ingredients

Scale
  • 500g boneless, skinless chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 red chili or 1 tsp chili flakes
  • 3 tbsp soy sauce (low-sodium)
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 2 tbsp vegetable oil
  • 2 cups cooked jasmine or basmati rice

Instructions

  1. In a bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar (or lime juice), and cornstarch (if using) to create the sauce.
  2. Heat one tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the chicken slices and season with salt and pepper. Cook until golden brown on both sides (about 5 minutes total). Remove from pan and keep warm.
  3. In the same pan, add another tablespoon of vegetable oil. Sauté minced garlic, sliced onions, and chopped chili for about 2 minutes until fragrant.
  4. Add the red and yellow bell peppers to the pan and stir-fry for an additional 3–4 minutes until tender yet crisp.
  5. Return the chicken to the pan and pour in the prepared sauce. Cook for an additional 2–3 minutes until everything is well coated and heated through.
  6. Serve hot over jasmine or basmati rice.
