Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth (low-sodium)
  • 1/4 cup honey
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Green onions and fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with Cajun seasoning, salt, and pepper. Sear them for 5–6 minutes on each side until golden brown. Remove from the skillet and set aside.
  2. In the same skillet, add diced onion and bell pepper; sauté for about 3–4 minutes until softened. Add minced garlic and smoked paprika; cook for another minute.
  3. Stir in the long-grain rice until coated, then pour in chicken broth and honey. Mix well.
  4. Nestle the seared chicken thighs into the rice mixture. Bring to a gentle simmer, cover with a lid, and reduce heat to low. Cook for about 20–25 minutes until rice is tender and liquid is absorbed.
  5. Let it rest covered for an additional 5 minutes before serving. Garnish with green onions and parsley.
