Ingredients

Scale
  • 3/4 cup extra virgin olive oil
  • 1 shallot (finely chopped)
  • 6 cloves garlic (grated)
  • 1 teaspoon red chili flakes
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup chopped Castelvetrano olives
  • 1/4 cup chopped parsley

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Maldon salt

Instructions

  1. In a medium saucepan over medium-low heat, combine olive oil, chopped shallot, grated garlic, and red chili flakes. Infuse for about 4-5 minutes until shallots are soft and fragrant.
  2. Remove from heat and let cool slightly. Transfer the infused oil to a medium bowl.
  3. Add remaining ingredients: parmesan cheese, sun-dried tomatoes, olives, parsley, basil, balsamic vinegar, and salt. Mix until well combined.
  4. Let the dip rest for at least 15 minutes before serving to allow flavors to meld.
