Ingredients

Scale
  • 1 lb lean flank steak (trimmed and thinly sliced)
  • 4 cups baby bok choy (chopped)
  • 1 medium red bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 cup water
  • 1 tsp cornstarch (or arrowroot powder)
  • 1 tbsp hoisin sauce (optional)
  • 1 tsp sriracha (optional)
  • Cooking spray
  • Green onions and sesame seeds for garnish

Instructions

  1. In a bowl, combine sliced beef with 1 tbsp soy sauce and cornstarch. Allow it to marinate for 5 minutes.
  2. Whisk together the remaining soy sauce, rice vinegar, sesame oil, water, hoisin sauce (if using), and sriracha in another bowl.
  3. Heat a large skillet or wok over high heat and coat lightly with cooking spray. Stir-fry minced garlic and grated ginger for about 30 seconds until fragrant.
  4. Add the marinated beef to the skillet and cook for 2-3 minutes until browned; then remove from skillet.
  5. Re-spray the skillet, add bok choy stems and bell pepper, stir-frying for about 2 minutes before tossing in bok choy leaves. Cook until wilted.
  6. Return beef to the skillet, pour in the prepared sauce mixture, stir well, and simmer for about 1-2 minutes until thickened.
  7. Serve hot garnished with green onions and sesame seeds.
