Scale
  • 300 g rigatoni pasta
  • 500 g passata tomato sauce
  • 250 g ricotta cheese
  • ½ cup finely chopped onion
  • 4 chopped garlic cloves
  • ¼ cup extra virgin olive oil
  • ½ tablespoon Italian seasoning
  • ¾ cup grated Parmesan cheese
  • Fresh basil leaves
  • Salt and black pepper to taste

Instructions

  1. In a large skillet over medium-high heat, warm the olive oil. Add chopped onions with a pinch of salt and sauté until translucent (3–5 minutes).
  2. Stir in the chopped garlic and sauté for an additional minute until fragrant.
  3. Pour in the passata tomato sauce, adding Italian seasoning, salt, and pepper. Simmer on low-medium heat for about 10 minutes, stirring occasionally.
  4. Meanwhile, bring salted water to boil in a large pot and cook rigatoni according to package instructions until al dente. Reserve some pasta water before draining.
  5. Add grated Parmesan cheese and torn basil leaves into the sauce, stirring until combined. Gently fold in ricotta cheese until fully incorporated.
  6. Combine drained rigatoni with the sauce, mixing thoroughly. If needed, add reserved pasta water for desired consistency.
