Ingredients

Scale
  • 2 salmon fillets (150-170g each)
  • 1 tbsp olive oil (for salmon)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Fresh parsley (for garnish)
  • 300g baby potatoes
  • 1 tbsp olive oil (for potatoes)
  • 1 tsp dried Italian herbs
  • 200g fresh asparagus, trimmed
  • 1 tsp olive oil (for asparagus)
  • 100g shredded mozzarella cheese
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Toss baby potatoes in olive oil, salt, pepper, and Italian herbs. Spread on the baking tray and roast for about 30 minutes, flipping halfway.
  3. In a small bowl, mix soy sauce, honey, Dijon mustard, minced garlic, and olive oil for the glaze.
  4. Heat a grill pan over medium-high heat. Brush half the glaze on skinless sides of salmon fillets. Sear for 3-4 minutes until golden; flip and cook another 3-4 minutes until cooked through.
  5. Toss asparagus with olive oil, salt, and pepper; spread on another tray. Top with mozzarella cheese and roast alongside potatoes for about 8-10 minutes until tender and bubbly.
  6. Serve salmon topped with remaining glaze alongside cheesy asparagus and roasted potatoes garnished with fresh parsley.
