Ingredients

  • 1 scoop vanilla protein powder (about 25-30g)
  • 1/2 cup rolled oats
  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk or milk alternative
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • toppings of choice (fresh berries, granola, maple syrup, nut butter)

Equipment

  • Mixing bowl
  • Whisk
  • Measuring Cups
  • ramekins
  • Oven

Method

  1. Preheat oven to 375°F (190°C). Lightly grease two 6-ounce ramekins with cooking spray or butter.
  2. In a mixing bowl, combine protein powder, rolled oats, Greek yogurt, milk, egg, baking powder, cinnamon, and salt. Whisk gently for about 30 seconds until just combined. A few small lumps are okay - do not overmix.
  3. Divide the batter evenly between the prepared ramekins, filling each about three-quarters full.
  4. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown and spring back when lightly pressed. For a crispier top, broil 6 inches from the heat source for the last 1-2 minutes, watching carefully to prevent burning.
  5. Let the bowls cool in the ramekins for 3-4 minutes, then add your favorite toppings and serve warm.
