- In a medium mixing bowl, combine the cottage cheese, eggs, rolled oats, tomato paste, onion powder, garlic powder, paprika, salt, and black pepper. Stir vigorously until you achieve a thick, uniform batter. Let the batter rest for 3-5 minutes.
- Lightly wet your hands with cold water to prevent sticking. Scoop about 2 tablespoons of mixture and form it into a patty about 1/2-inch thick and 2-3 inches wide. Repeat to make 8-10 patties.
- Heat 1 tablespoon of oil in a non-stick skillet over medium heat for about 2 minutes. Test readiness with a tiny bit of batter; it should sizzle gently.
- Carefully place 4-5 patties in the pan, leaving space between each. Cook for 3-4 minutes until the bottom is golden-brown and edges look set. Flip gently and cook another 3-4 minutes until firm and golden.
- Transfer cooked patties to a paper towel-lined plate. If cooking in batches, add another teaspoon of oil between batches and maintain medium heat throughout. Serve immediately.

Notes
Customize the patties by adding herbs or swapping rolled oats for breadcrumbs for variation.
