Ingredients

  • 1 cup Greek yogurt
  • 1 scoop vanilla protein powder
  • 2 tablespoons chia seeds
  • 1/2 cup mixed berries
  • 1 tablespoon honey or maple syrup
  • 1/4 cup granola
  • 1 tablespoon almond butter
  • 1 tablespoon sliced almonds
  • 1 tablespoon flax seeds
  • optional toppings: coconut flakes, dark chocolate chips, fresh fruit

Equipment

  • Mixing bowl
  • Spoon
  • Serving bowls

Method

  1. In a mixing bowl, combine the Greek yogurt and protein powder. Stir vigorously for 30-45 seconds until completely smooth with no powder clumps visible.
  2. Add the chia seeds and stir well to distribute evenly. If serving immediately, proceed to next step. For optimal texture, let sit 2-3 minutes then stir again to prevent clumping.
  3. Drizzle in the honey or maple syrup and mix thoroughly. Taste and adjust sweetness if needed.
  4. Divide the yogurt mixture evenly between two serving bowls or meal prep containers.
  5. Top each bowl with half of the mixed berries, granola, almond butter, sliced almonds, and flax seeds. For meal prep, store toppings separately and add just before eating.
  6. Serve immediately or refrigerate for up to 3 days. Let sit at room temperature for 5-10 minutes before eating if refrigerated.
