Ingredients

Meat and Seasoning
  • 1 lb lean ground beef or turkey 90% lean recommended
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
Base
  • 4 cups romaine lettuce chopped, or substitute 2 cups cooked quinoa, brown rice, or cauliflower rice
Toppings
  • 1 cup cherry tomatoes halved
  • 0.5 cup dill pickles sliced
  • 0.5 medium red onion thinly sliced
  • 1 cup shredded cheddar or American cheese
Burger Sauce
  • 0.5 cup low-fat Greek yogurt for burger sauce
  • 1 tbsp yellow mustard
  • 1 tbsp ketchup
  • 0.5 tsp garlic powder for sauce
  • 0.5 tsp smoked paprika
  • salt and pepper to taste for sauce

Equipment

  • large skillet

Method

Cooking
  1. Heat a large skillet over medium heat. Add the ground beef and break it apart with a wooden spoon. Season immediately with salt, pepper, garlic powder, and onion powder. Cook for 8-10 minutes, stirring occasionally, until the meat is browned and cooked through with no pink remaining. Drain any excess fat and set aside.
  2. While the beef cooks, prepare your base. If using lettuce, chop it into bite-sized pieces. If using quinoa or rice, start cooking these first as they'll take 15-20 minutes. For cauliflower rice, use it raw for crunch or quickly sauté it for 3-4 minutes until just tender.
  3. Make the burger sauce by whisking together Greek yogurt, mustard, ketchup, garlic powder, smoked paprika, salt, and pepper in a small bowl until completely smooth. Taste and adjust seasoning as needed.
  4. Assemble your bowls by layering your chosen base, then topping with seasoned beef, cherry tomatoes, pickles, red onion, and shredded cheese. Drizzle with burger sauce. Add optional toppings like avocado, bacon, or a fried egg if desired.
