  • 3 large yellow onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1/2 cup dry white wine
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups shredded Gruyère cheese
  • 3/4 cup grated Parmesan cheese
  • 2 cups cooked, shredded chicken breast
  • Fresh parsley

Method

  1. Preheat oven to 375°F (190°C). Lightly grease a 2-quart baking dish.
  2. Cook gnocchi according to package directions. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add onions and salt. Cook for 25-30 minutes, stirring every 5 minutes, until onions are caramelized.

  5. Sprinkle flour over the onions and stir. Cook for 1 minute.
  6. Gradually whisk in beef broth and wine. Bring to a simmer and cook until thickened, about 3-5 minutes.
  7. Remove from heat and let cool for 2-3 minutes. Stir in thyme, Greek yogurt, cooked gnocchi, shredded chicken, and 1 cup of the Gruyère cheese.
  8. Transfer mixture to the prepared baking dish. Top with remaining 1/2 cup Gruyère and all the Parmesan cheese.
  9. Bake for 20-25 minutes, until bubbly and golden on top.
