  • 2 tablespoons butter unsalted preferred
  • 3 large yellow onions thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth low-sodium preferred
  • 1/2 cup dry white wine optional; substitute with additional 1/2 cup beef broth
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1/2 cup plain Greek yogurt full-fat preferred
  • 1 1/2 cups shredded Gruyère cheese divided: 1 cup for mixing, 1/2 cup for topping
  • 3/4 cup grated Parmesan cheese
  • 2 cups cooked, shredded chicken breast about 1 rotisserie chicken or 2 large cooked chicken breasts
  • Fresh parsley chopped, for garnish

Equipment

  • large skillet
  • Baking dish

Method

  1. Preheat oven to 375°F (190°C). Lightly grease a 2-quart baking dish.
  2. Cook gnocchi according to package directions (usually 2-3 minutes until they float). Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add onions and salt. Cook for 25-30 minutes, stirring every 5 minutes, until onions are deeply caramelized and deep golden brown.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Sprinkle flour over the onions and stir to combine. Cook for 1 minute.
  6. Gradually whisk in beef broth and wine (if using). Bring to a simmer and cook until thickened, about 3-5 minutes.
  7. Remove from heat and let cool for 2-3 minutes. Stir in thyme, Greek yogurt, cooked gnocchi, shredded chicken, and 1 cup of Gruyère cheese.
  8. Transfer mixture to the prepared baking dish. Top with remaining 1/2 cup Gruyère and all the Parmesan cheese.
  9. Bake for 20-25 minutes, until bubbly and golden on top.
  10. Let rest for 5 minutes before serving. Garnish with fresh parsley.
