Ingredients

Chicken and Coating
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 1/4 cup cornstarch for coating
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
Sauce
  • 1/2 cup fresh orange juice
  • 1/4 cup tamari or gluten-free soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon orange zest
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch for sauce thickening
  • 2 tablespoons water for slurry
  • 1 scoop unflavored or vanilla protein powder
Vegetables and Garnish
  • 1 cup shelled edamame cooked, thawed if frozen, and drained
  • green onions for garnish
  • sesame seeds for garnish

Equipment

  • Large bowl
  • Skillet or Wok
  • small bowl

Method

Cooking Steps
  1. Place chicken pieces in a large bowl and sprinkle with 1/4 cup cornstarch, tossing until every piece is evenly coated.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add chicken in batches, letting each batch sit undisturbed for 3-4 minutes before flipping. Cook until golden brown and internal temperature reaches 165°F, about 6-8 minutes per batch. Remove and set aside.
  3. In the same skillet with remaining oil, add minced garlic and grated ginger, stirring for 30 seconds until fragrant but not browned.
  4. In a small bowl, whisk together orange juice, tamari, honey, rice vinegar, orange zest, sesame oil, and protein powder until smooth. Pour into the skillet with aromatics.
  5. Mix remaining 1 tablespoon cornstarch with 2 tablespoons water to create a slurry. Pour into bubbling sauce and simmer, stirring constantly as it thickens, about 45 seconds to 1 minute.
  6. Return cooked chicken and edamame to the skillet, tossing until everything is coated. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
