Ingredients

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Ground Turkey Filling
  • 1 pound ground turkey lean
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup bell pepper diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup black beans cooked and drained
  • 1 cup corn cooked
  • 1 cup shredded cheese optional for topping
Toppings
  • 1/4 cup sour cream optional
  • 1/4 cup green onions sliced for garnish

Method

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork.
  3. Place sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
Cook Ground Turkey Filling
  1. In a skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes.
  2. Add the diced onion, garlic, and bell pepper to the skillet and sauté until softened, about 5 minutes.
  3. Stir in cumin, paprika, salt, black pepper, black beans, and corn. Cook for another 5 minutes until heated through.
Assemble and Serve
  1. Once sweet potatoes are cooked, remove from the oven and let cool slightly.
  2. Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh to make room for the filling.
  3. Fill each sweet potato half with the ground turkey mixture.
  4. Top with shredded cheese if desired, and return to the oven for an additional 5 minutes to melt the cheese.
  5. Serve topped with sour cream and green onions.
