Ingredients

  • 100 g fat-free cottage cheese
  • 0.5 tbsp fresh lime juice
  • 1 tbsp taco seasoning
  • 1 tbsp sweet corn
  • 1 tbsp black beans
  • 2 tbsp chunky salsa
  • 1 tbsp fresh cilantro
  • 70 g cooked chicken
  • 30 g reduced-fat mozzarella/cheddar blend

Equipment

  • Blender
  • Oven
  • Ramekin or Small Baking Dish

Method

  1. Preheat oven to 375°F (190°C conventional, 170°C fan, or Gas Mark 5).
  2. In a blender or food processor, combine cottage cheese, lime juice, and taco seasoning. Blend for 30-45 seconds until completely smooth with no visible curds remaining.
  3. Pour the blended cottage cheese mixture into a 1-2 cup oven-safe ramekin or small baking dish. Stir in the sweet corn, black beans, salsa, cilantro, and chopped chicken until evenly combined throughout the base.
  4. Sprinkle the shredded cheese evenly over the top, covering the entire surface.
  5. Bake for 15 minutes until the dip is warmed through and the cheese has melted and turned golden. For extra browning, switch to broil for the last 2 minutes.
  6. Remove from oven and let cool for 2-3 minutes before serving. Serve with tortilla chips, crackers, or fresh vegetable sticks.
