Ingredients

Quinoa and Vegetables
  • 1.5 cups uncooked quinoa rinsed well
  • 1.5 cups shelled edamame
  • 1 cup chickpeas rinsed and drained
  • 1 red bell pepper finely diced
  • 0.5 red onion finely chopped
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup roasted peanuts chopped
  • 2 tablespoons hemp seeds
  • 2 tablespoons chia seeds
  • 1 cup grilled chicken OR baked tofu OR cooked shrimp diced or cubed, about 6 oz
Dressing
  • 3 tablespoons fresh lime juice about 2 limes
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger grated
  • 2 cloves garlic minced

Equipment

  • Large pot
  • Baking sheet
  • Mixing bowl
  • Whisk
  • knife
  • cutting board

Method

Preparation
  1. Cook the quinoa according to package directions, using a 2:1 water-to-quinoa ratio. Once cooked after 15-18 minutes, fluff it with a fork and spread it on a large baking sheet to cool completely for 15-20 minutes.
  2. While the quinoa cools, prep all your vegetables. Dice the red bell pepper, finely chop the red onion and cilantro, and roughly chop the roasted peanuts.
  3. Prepare your chosen protein. Grill or bake chicken at 375°F for 20-25 minutes until it reaches 165°F internally, or bake tofu at 400°F for 25-30 minutes, or cook shrimp in a skillet until pink and opaque.
  4. Make the dressing by whisking together lime juice, soy sauce, sesame oil, honey, ginger, and garlic until fully emulsified.
Combine
  1. In a large mixing bowl, combine the cooled quinoa, edamame, chickpeas, diced bell pepper, red onion, cilantro, hemp seeds, chia seeds, and most of the chopped peanuts. Add your prepared protein and toss gently.
  2. Pour the dressing over the salad and toss everything together until evenly coated. Let it sit in the refrigerator for at least 30 minutes before serving. Garnish with reserved peanuts just before serving.
