  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup strong brewed coffee or espresso
  • 1 scoop vanilla or coffee protein powder
  • 1/2 cup raw cashews soaked
  • 1/4 cup Greek yogurt
  • 1/4 cup water
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 1-2 tsp cocoa powder
  • 2 tbsp hemp seeds optional

Equipment

  • Medium bowl
  • Blender

Method

  1. In a medium bowl, whisk together chia seeds, high-protein milk, 1 tablespoon maple syrup, vanilla extract, and protein powder until smooth. Let it sit for 10 minutes, stirring every 2-3 minutes until gel-like.
  2. Stir in cooled coffee until evenly distributed. If using hemp seeds, fold them in. Divide the mixture between two serving glasses and refrigerate for 15-20 minutes.
  3. Drain soaked cashews and blend with Greek yogurt, water, 2 tablespoons maple syrup, vanilla extract, lemon juice, and salt until smooth. Add water as needed for spreadable consistency.
