  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp BBQ sauce divided: 2 tbsp for chicken, 1 tbsp for drizzling
Bowl Components
  • 1/2 cup cooked brown rice
  • 1 cup chopped romaine lettuce
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup cherry tomatoes
  • 1/4 medium avocado
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp ranch dressing

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • small bowl
  • knife
  • cutting board

Method

Cooking Instructions
  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. In a small bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper to create your spice rub.
  2. Pat the chicken breast completely dry with paper towels. Rub the spice mixture all over the chicken. Place it on the prepared baking sheet and bake for 20-25 minutes until the internal temperature reaches 165°F in the thickest part.
  3. Let the chicken rest for 5 minutes after removing it from the oven. While it rests, dice your vegetables and prep your bowl components.
  4. Dice the rested chicken into bite-sized pieces and toss it with 2 tablespoons of BBQ sauce in a bowl.
  5. Build your bowl starting with the brown rice as your base, then create sections with chopped romaine, black beans, corn, cherry tomatoes, and avocado slices arranged in a circle. Top with BBQ chicken, sprinkle with cheddar cheese, and finish with a drizzle of ranch dressing and the remaining tablespoon of BBQ sauce.
