Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 8 oz fettuccine
  • 2 cloves garlic minced
  • 1 tbsp olive oil for cooking
  • 1 cup low-fat milk
  • 1/2 cup plain Greek yogurt
  • 1/2 cup grated Parmesan cheese plus extra for garnish
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg

Equipment

  • Large pot
  • large skillet
  • Mixing bowl
  • Whisk

Method

  1. Bring a large pot of salted water to a boil and cook fettuccine according to package directions. During the final 3 minutes of cooking time, add broccoli florets to the pasta water. Drain together and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook undisturbed for 3-4 minutes until golden. Flip and cook another 3-4 minutes until internal temperature reaches 165°F. Add minced garlic during the last minute of cooking.
  3. In a mixing bowl, whisk cornstarch with 2 tablespoons of the milk until completely dissolved. Add remaining milk, Greek yogurt, Parmesan cheese, salt, pepper, and nutmeg, whisking until smooth with no lumps.
  4. Reduce heat to medium and pour sauce mixture into skillet with chicken. Stir constantly and cook 3-5 minutes until sauce thickens. Add milk one tablespoon at a time if sauce becomes too thick. If sauce breaks, remove from heat and whisk in 1-2 tablespoons cold milk until smooth.
  5. Add drained pasta and broccoli to skillet and toss until coated with sauce. Let rest for 2-3 minutes, then serve immediately, garnished with extra Parmesan and fresh cracked black pepper if desired.
