Ingredients

Seafood Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 4 cups fish stock or seafood broth
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 pound mixed seafood shrimp, scallops, and fish
  • 1 cup heavy cream for richness
Bread Bowls
  • 4 medium bread bowls sourdough or similar

Method

Prepare the Seafood Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, diced carrots, and celery. Cook for an additional 5 minutes until vegetables are softened.
  3. Pour in fish stock and diced tomatoes. Add thyme, oregano, salt, and pepper. Bring to a simmer.
  4. Add the mixed seafood and cook for 10-15 minutes until seafood is cooked through.
  5. Stir in heavy cream and adjust seasoning if necessary. Remove from heat.
Prepare the Bread Bowls
  1. While the soup is cooking, prepare the bread bowls by cutting the tops off and hollowing out the insides.
  2. Place the hollowed bread bowls on a baking sheet and toast in the oven at 350°F (175°C) for about 5-7 minutes until slightly crispy.
Serve
  1. Ladle the hot seafood soup into each bread bowl and serve immediately.
