Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1 cup snap peas or green beans
  • 1 avocado, sliced
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a mixing bowl, combine soy sauce, teriyaki sauce, honey, olive oil, garlic powder, ginger powder, salt, and pepper to create the marinade.
  2. Pour the marinade over the chicken thighs in a resealable bag or shallow dish. Seal and refrigerate for at least 30 minutes to 2 hours.
  3. While the chicken marinates, chop the vegetables and prepare your cooking surface—grill or skillet preheated over medium-high heat.
  4. Remove excess marinade from the chicken and cook on the grill or skillet for about 6–8 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  5. Let the chicken rest for a few minutes before slicing it into bite-sized pieces.
  6. To assemble your bowls: start with brown rice as the base, top with sliced chicken, pineapple chunks, bell pepper, snap peas or green beans, avocado slices, green onions, and sesame seeds.
