Ingredients

Scale
  • 3/4 cup creamy peanut butter
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 2/3 cup powdered sugar
  • 3 – 4 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a stand mixer fitted with a paddle attachment, combine 3/4 cup creamy peanut butter, 1/4 cup unsalted butter, and 1 cup packed light brown sugar at low speed until combined. Increase speed until light and fluffy.
  3. Add 1 large egg and 1 teaspoon pure vanilla extract to the mixture and beat until fully incorporated.
  4. Sift together 1 cup all-purpose flour, 2 tablespoons cornstarch, 1/4 teaspoon baking soda, and 1/2 teaspoon salt, then add to the wet mixture, mixing at low speed until just combined.
  5. Shape the dough into oval cookies and place them on the prepared baking sheets.
  6. Bake for 9 to 10 minutes until slightly puffed and golden around the edges. Let them cool for a few minutes before transferring to a wire rack.
  7. For the filling, combine 1/2 cup creamy peanut butter, 2/3 cup powdered sugar, 3 – 4 tablespoons heavy cream, and 1/2 teaspoon vanilla extract in the stand mixer until smooth.
  8. Pipe the filling onto the flat side of one cookie, then top with another cookie to create a sandwich.
  9. Allow the cookies to rest for 30 minutes before serving for enhanced flavor.
