Ingredients

Scale
  • 1 box store-bought pie dough (2 sheets)
  • 2 tbsp unsalted butter (or plant-based)
  • 2 1/2 cups finely chopped Fuji or Honeycrisp apples
  • 1/4 cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • Juice of 1/2 lemon
  • 1/2 tsp cornstarch mixed with 1 tbsp water
  • 1 large egg (for egg wash)
  • 1/2 cup granulated sugar + 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt butter. Add chopped apples, brown sugar, cinnamon, and lemon juice; cook for about 10 minutes until tender.
  3. Stir in cornstarch-water mixture until thickened; remove from heat and let cool.
  4. Roll out pie dough on a floured surface; cut into apple shapes using a cookie cutter.
  5. Place half of the cutouts on the baking sheet. Add a tablespoon of apple filling to each, brush edges with egg wash.
  6. Top with remaining cutouts, seal edges by crimping with a fork, and cut slits for ventilation.
  7. Brush tops with egg wash and sprinkle with cinnamon sugar.
  8. Bake for 12-14 minutes until golden brown.
